replace sprintf with snprintf

    Description

      sprintf() is a security risk and is also deprecated on some platforms (namely MacOS), so we should replace it with snprintf().
      Or, when possible, with my_sprintf() or my_vsnprint() (description and rationale in MDEV-21978).
