Increase Tests for UUIDv7

    Description

      It would be useful to have a test to check that the timestamp that the UUIDv7 is generated is within a tolerance interval from the actual timestamp it is generated at.

      This test could be realized by inserting a TIMESTAMP and UUID into the same table row and comparing them. This would show that it is valid and correct to the time it was created.
