Move categories processing to gitdm source

At the moment the categories processing is a crude hack and can generate slightly incorrect results due to people switching organisation mid-year. Instead we should pull this into gitdm's processing.

I already made parts of this tool somewhat compatible with gitdm's way of doing things so that it could be integrated at a later date.
