Setup Storybook for components documentation and development

To make our Vue components easier to develop, test, and share, we want to add Storybook. It lets us view and interact with components in isolation, helps keep documentation up to date, and makes it easier for the team to understand and reuse UI parts. This will speed up development, reduce bugs, and improve collaboration.
