Type definitions: undeclared options, dead logPackets option, logger and ConnectionInfo corrections

The TypeScript definitions had drifted from the options the connector actually reads.

missing options: bitOneIsBoolean, jsonStrings and fullResult (query level), restrictedAuth, permitConnectionWhenExpired, permitRedirect, charsetNumber, and the mysql2 compatibility aliases enableKeepAlive and keepAliveInitialDelay (connection level).

logPackets was declared but nothing in the connector reads it: removed.
